Freshly Made! The Allure of New Sake

President Kawazu says "Sake brewing usually begins around October, and every year we strive to make sake that is "better than last year's." For the past few years, he has tried about five new types of sake each year. The results have led to the development of a wide variety of sake brands.
 
President Kawazu's policy for brewing new sakes is "to not stick to one particular belief, because the way people now drink, and the changes in people's ideas about sake, is why our brewery has been making new kinds. We have one sake that is very sweet, and another that is a sparkling sake, plus the regular sakes." He adds "There is no point in only making the same sake every year, rather we think "Why not take on new challenges while making the most of our past expertise?"
 
"In order to make sake that people find enjoyable, it is important to listen to what they, and not just customers, but also what other brewers have to say.  We realize that by having discussions with each other, we ensure that the sake tastes great. So while cherishing the daily accumulation of these efforts, we still will keep working hard so people are surprised and say, 'What a delicious sake made by a great sake brewery from Aso!"
President Kawazu tells us that the brewery also carries a limited-edition Sake label, Shibasaburo Kitazato, which features a famous Japanese physician and bacteriologist (1853-1931). "It's only available at the brewery, so you must stop by Kawazu Brewing Partnership Co., Ltd. when you're in the Aso/Oguni area!"
