Junmai Ginjo Shichihoda

This unique sake is light and dry, and the taste gets better with each sip. Therefore, food served with this sake should not be too light but rather more heavily seasoned to match the changes in this unique Sake. President Kawazu explains, "Shichihoda is a name of a Yokai (mythical creature from a Japanese folk tale) that is said to have appeared in the Higashiyama area of Kyoto. About 10 cm long, it looks just like a dragon. Its color is bright red, and the part between the scales glows gold. If you are bitten by it, you will fall down before taking seven steps! We took the name with the hope that you enjoy our sake so much that you won't be able to take seven steps if you drink it."
 
The sake rice used is 'Ipponjime' produced in Niigata, which only a few breweries in Japan use. "We have had a local farmer grow our rice for 10 years. We put everything we can into all the ingredients and processes including drying the rice for sake making," says President Kawazu.

Genshu (Unprocessed/Raw Sake)  Gen 

This sake is not watered down and retains its original alcohol content of 19%. In summer, it is best enjoyed over crushed ice, which instantly cools it. For fall and winter drinking, drink it over large ice cubes as the ice melts slowly.  "You should even try heating it up to enjoy its flavor and richness any time," adds President Kawazu. Kawazu Brewing Partnership Co., Ltd. won the highest gold award in the premium heated sake category at the National Heated Sake Contest 2022. The brewery invented the idea of diluting the alcohol content with ice or heating the sake to be enjoyable for a longer period of time. "It goes great with Nabe (hot pot) and other Japanese dishes, so why not enjoy it over a leisurely dinner time with family and friends?"
