The Art of Old-Fashioned Brewing Method

Kawazu Brewing Partnership Co., Ltd.  presses all brands of sake by the traditional method of 'Fune Fukuro Shibori'. In this way, the unrefined sake is poured into bags that are stacked on top of each other in a long, narrow tank, so the sake is pressed by the weight of the bags. Although it takes longer, it has the advantage of making it easier to adjust the flavor and to satisfy diverse customer preferences.
 

Where did the name Shichihoda come from?

Shichihoda is considered to be a mythical creature that appeared on a children's TV program which President Kawazu was watching with his son. Upon seeing the dragon, he immediately searched further about it and found out it had red scales with golden edges.  This combination of joyous colors gave him inspiration and he thought, "Perfect name for the Sake!" The wooden box for the Junmai Daiginjo Shichihoda (1.8 liters) is made of locally grown cedar trees, and not branded so that the box can be used again for something else. "To contribute to SDGs (17 Sustainable Development Goals) I'm hoping," says President Kawazu.
